Music and sunshine

Yesterday people started sharing music. I got into the swing, and chased some of my favorite pieces on YouTube. There was one choice of Yo Yo Ma which were "Greatest Hits" and I got 2 hours of lovely music. Here's the link, in case you also like his cello.

Life changes.

For me, I'm never finished with all I want to do in one day. There are so many projects I start and can't seem to finish.  They sit all over the apartment. I'm reading at least 3 books, one of which will be snatched back to the library system, and I'll put it on hold so I can download it again to read digitally. The books stacked about on shelves and tables remind me that I could read them as well!

Instead I planned to sit for a few moments in sunshine, embracing the moment. I picked up the mail, dropped the rent check in the dropbox, and came right back inside. The air had that acrid hot tar smell, from the road being repaired. Not to mention a high pollen count which I knew, but wished wouldn't bother my breathing. Oh well. I came back to enjoy my slice of pie for lunch with Yo Yo Ma. Why not?

The apple pie plate

In order to be more artistic (yep, I think I've succumbed to that as a goal) I made some decorative plate/bowls. They are basically a shape like a pie pan...maybe a serving bowl for pasta, or just a small pie pan.

First let me share the Apple Pie Plate...


 The painting is pretty loose in this rendering of an apple...not to mention painting it with glazes that require 3 coats for good coverage. I'm ok with the way it came out.



It's actually a bit deep, and since I fix apple pie once a year, and usually for myself, I think it will work. Or maybe I'll sell it. Who knows...

My favorite pie

My sharing of something to Sepia Saturday this week is, well, weak.



What, I don't have any old photos of baking?
Or kitchens?
Or me in an apron?

Or anything along those lines?

Scratching my head.  I used to do those things, but they weren't considered photo-worthy.

My favorite pie, Dutch Apple Pie.  I make my own from memory.


Favorite Dutch Apple Pie Recipe

I sometimes make the crust from scratch, but usually just get the refrigerated folded up ones from the grocery. Apples are not peeled by me...but just cored and sliced. I like a golden delicious, but other semi-tart apples are also good in pies.

I use 6 large or maybe 10 medium size apples...stir in a big bowl with
 1/2 cup of flour
 1/2 cup of sugar
2 teaspoons cinnamon
1/4 teaspoon ground cloves

I pile the sliced apples in the pie pan with only a bottom crust (unbaked).
then mix up 
1/2 cup sugar
1/2 cup flour
1 teaspoon cinnamon
1/2 cup of butter
the butter must be cut into the dry ingredients to make a good topping, so when the crumbs are the size of peas, you are ready to spoon it over the pie, and press onto the apples, making sure none are uncovered.

Place on a cookie sheet and cook at 375 for about an hour until the topping has sunk into the apples and is nicely brown.  If the edges of the crust are getting too brown, put aluminum foil over them so they don't burn.

Cool well, then slice.  A scoop of rich vanilla ice cream just adds to it's great taste.

And I thought I had a photo of a pot pie in one of my "mug-bowls" but am not able to find it today. Being a potter, you know I like to set off my pots with beautiful food, and vise versa. Here are the mug bowls.

Children make you a mother

A casserole dish for Dutch Apple Pie or deep dish apple pie.  I sometimes will just microwave one apple, pared, with cinnamon and sugar sprinkled on top.  That's the quickie version.



I know, it should be full of pie.  But wait, I'll tell you how to make it, and you can do it yourself.  Right?


Or not.

Either make a pie crust with your fav. recipe, or buy one of those refrigerated ones...line the casserole dish, and maybe stretch the crust to go up the sides most of the way.

Pare and core 6-7 medium apples, preferably something tart.
Sprinkle about 1/4 c flour over them
Sprinkle about 2 teaspoons of sugar
Sprinkle enough cinnamon that they all are slightly tan,
Mix them all together and
Put in casserole

In the original bowl...
Mix another 1/4 - 1/2 c of flour with
3 tablespoons of sugar
and 1 teaspoon of cinnamon
and 1/4  c of butter.
Cut the flour,sugar,cinnamon mixture in with the butter with two knives or a pastry blender to make mealy texture
pour over top of apples and kind of press it down, so it covers all the apples
bake about 45 min,  in 350 degree oven, until apples are soft and crust top is brown

A squirt of whipped cream, or vanilla ice cream makes this heavenly.
